HOLY CRAP. 1 month later… Officially living in the heart of Toronto! We’ve been M.I.A. because we’ve been busy moving into our new place! But this week, but I’m glad that I finally got around to cooking a decent breakfast and enjoying it without being surrounded by cardboard boxes! This week’s wakin’ & makin’, I have for you the healthy mini banana blueberry pancakes. I remixed this recipe from blogilates’ to create this delicious breakkie!
The ingredients are as follows:
- 1 ripe banana
- 2 whole eggs
- 1 handful of blueberries
- 1 teaspoon of flaxseed
- 1 handful of crushed oatmeal (optional)
If you have a magic bullet you can whip up these pancakes super quick! I cracked 2 eggs into the cup, added a banana, a handful of blueberries and a bit of flax seed to the mix, then BLEND. Pour the mix straight into the heated pan about the size of a silver dollar—er maybe the size of a pringle chip would be more relevant—and cook for about 1-2 min on each side on low heat. You’ll have to experiment on the timing for this part (don’t worry I burned my first batch—but practice makes perfect!). You may find that the texture is very fluffy and soft. For more body and firmer texture add a handful of crushed oatmeal (Thanks Ginny for the tip!). Et Voilà!
I finished it off with a drizzle of honey and garnished with some whole blueberries and a small square of butter (don’t judge). YUM! What’s your breakfast specialty?
